We asked one of our favourite Cornish foodie bloggers ‘Katie Eats Cornwall‘ to come up with a new recipe using our Cornish Bangers. We first met Katie at the Padstow Christmas festival last year where she stocked up on our range of different sausages and she’s been a fan and keen supporter of ours ever since. We were delighted when she said yes and we’re extremely happy with the results, here’s the recipe so you can have a go for yourself.

 

Kernow Sausage Co - Cornish Bangers Recipe

Katie Eats Cornwall – Cornish bangers with bacon and lentils

 

For 2-3 people
6 Cornish bangers
2 cloves of garlic finely chopped
3 small carrots diced
2 sticks of celery diced
1 leek diced
100g smoked bacon lardons
1 can of lentils drained
200ml chicken stock
A handful of chopped parsley

Katie Eats Cornwall – Cornish bangers with bacon and lentils

Start by frying the sausages in a little oil till brown and put to one side. Do the same with the bacon lardons and set aside with the sausages.

Then in the same pan fry the garlic, leeks, carrots and celery for 10 mins until softened.
Add in the cooked bacon lardons, drained lentils and chicken stock. Simmer gently for 5 minutes.
Return the sausages to the bacon and lentil mix along with some of the chopped parsley and cook for a further 10 minutes.
Add a final sprinkling of fresh parsley to serve.
