This morning The Kernow Sausage Company hosted a sausage making masterclass and served up the Ultimate Cornish Breakfast in celebration of Farmhouse Breakfast Week at The Beach Hut, Watergate Bay. And what an event it was...

Gavin butchers a shoulder

The morning kicked off with Gavin showing guests the art of butchering a shoulder. From here he invited guests to split into their designated groups to develop the flavour for their sausages using herbs and spices provided. Mixing the water and rusk with the minced meat and ingredients, the groups got stuck in and made the most of the hands-on opportunity.

The groups then nominated a person to go up and fill the sausages - no easy task (often very messy). The sausages were then tied off by another member of each group, completing the sausage making process.

It was great to see the guests getting stuck in and enjoying the masterclass! All guests took home a portion of the sausages they had made, excited at the prospect of trying the sausages they had developed.

The masterclass was then followed by the Ultimate Cornish Breakfast - a breakfast made entirely of Cornish ingredients including Kernow Sausage Company hogs pudding, Trelawney Traditional sausages, dry cured streaky bacon and Cornish Sweetheart streaky bacon. Guests sat around one large table and helped themselves to their hard earned breakfast.

It really was a fantastic event and we would like to extend our thanks to the Beach Hut staff who cooked up an outstanding breakfast and did a great job of looking after the guests.

An award-winning Cornish meat producer is highlighting the importance of eating breakfast with a special celebratory event for Farmhouse Breakfast Week (21- 26 January 2013).

Tregony-based Kernow Sausage Company will be emphasising the importance of using quality produce in a sausage making masterclass for Cornish hospitality businesses on Monday 21st January at The Beach Hut, Watergate Bay.

Owner of Kernow Sausage Company, Gavin Roberts said: “The hands-on approach of our sausage masterclass will not only be great fun, but will really show participants how much difference a carefully crafted and passionate approach can make to the end product.

“Breakfast is the one meal all guests eat at B&Bs and hotels and often the last one they have before they check out, so it is essential that the quality is really high. By choosing good quality breakfast ingredients hotels and restaurants will leave customers with a lasting memory of their stay.”

Farmhouse Breakfast Week runs annually and aims to highlight the health benefits of eating breakfast as well as showing consumers the wealth of local produce available across the country.

Born from farmhouse kitchen beginnings, Kernow Sausage Company now supply some of the county’s finest chefs, hotels and restaurants with their sausages, bacon and hogs pudding, made from pigs hand-reared on their Cornish farm.

Existing customer Watergate Bay Hotel recognises the value of providing a quality breakfast to their customers. Recently awarded Best Foodie Hotel at the 2013 Food Magazine Reader Awards, they are known for their quality food offering and locally sourced menu.

Executive Chef Neil Haydock, said: “We want all the food we serve here at Watergate Bay Hotel and The Beach Hut to showcase the very best of Cornwall’s produce and that goes for our breakfasts as well.

“We source everything we possibly can locally and like to give people choices which reflect what’s on offer here in Cornwall. Having quality reliable producers with great products is just as important as having talented chefs in the kitchen.”

Breakfast is also a vital component of the UK economy with the retail value of sales for the breakfast sector estimated at £1,582million*. Cornwall Food & Drink have recognised the direct impact this can have on the Cornish economy with their ‘Real Cornish Breakfast’ campaign, being launched to tie in with Farmhouse Breakfast Week.

MD of Cornwall Food & Drink, Ruth Huxley said: “Sourcing from local producers is incredibly important for the Cornish economy – it’s been well documented for years that keeping money circulating within the local economy generates multiple benefits for both business and community - our campaign is intended to remind people of that.”

The breakfast masterclass will be held at The Beach Hut at Watergate Bay for a number of local businesses. Invitees will hear Gavin from Kernow Sausage Company talk about the importance of using quality ingredients with good provenance as well as sharing some of the secrets of hand-made sausage production. Participants will be able to make their own sausages before sitting down to a Cornish farmhouse breakfast served by The Beach Hut.

Breakfast is served daily at The Beach Hut, Watergate Bay from 10am mid week and 9am on weekends.

A brand new Cornish bacon is launched this week having secured two food industry awards.

The ‘Cornish Sweetheart’ streaky bacon, developed by The Kernow Sausage Company, has picked up a British Pig Executive (BPEX) Silver Award and a Gold Great Taste Award before its official launch.

The unusual streaky bacon is marinated in molasses and chilli and cured for six weeks, a process which gives the bacon its distinctive colouring.

Gavin Roberts of The Kernow Sausage Company said: “We gave it the name Cornish Sweetheart on the grounds that it is very Cornish in its provenance and it has a sweet flavour.

“The bacon is made using traditional methods and it is the addition of the marinade that makes a big difference. It gives it a sweet edge and a really interesting depth of flavour. The combination of sweet and hot is a winner in my book.”

The double award-winning Cornish Sweetheart streaky bacon is marinated in molasses and chilli and cured for six weeks, a process which gives the bacon its distinct colouring.

Described as the ‘Oscars’ of the food world, the Great Taste Awards are organised by the Guild of Fine Food and are the acknowledged benchmark for speciality food and drink across the UK.

Winning products are awarded either single, double or triple gold, with triple gold being considered as “Wow, you must taste this”.

The Cornish Sweetheart streaky bacon was awarded gold, classed as “close to perfect”.

Gavin said: “As well as the flavour, I think the judges were quite interested in the appearance. It is a pink bacon with a dark edge around it, so it is unique to look at.”

“Continuous innovation and product development is very important to us, so we are thrilled that the Cornish Sweetheart bacon has won these awards.”

BPEX holds its awards each year in order to recognise pork manufacturers who meet specific quality criteria in various areas of the product including taste, innovation and visual appearance.

The Kernow Sausage Company’s Cornish Bratwurst, Trelawney Traditional Sausage and Proper Hogs Pudding were also awarded with BPEX awards.

Run by Gavin Roberts and his family, The Kernow Sausage Company supplies restaurants, hotels, delis and farm shops all over Cornwall with their multi-award winning range.

Kernow Sausage Company have a herd of 100 pigs on the farm, which are hand-reared and given plenty of space to roam around. They also source top quality meat from a number of carefully selected Cornish farms. The welfare of the animals is very important to the Roberts family, which Gavin believes also improves the quality and taste of the meat.
