Ingredients
250g minced beef
1 red chilli, finely chopped
1 bulb garlic, minced
1 small onion, finely diced
1 small tin of chopped tomatoes
2 teaspoons tomato puree
1 small bunch coriander
Juice of 1/2 lime
Salt and pepper
4 hotdog buns
4 slices olde smokey cheese
Method Chilli Cheese Dog Recipe
Heat a heavy bottomed pan over a moderate heat, add a dash of oil followed by the mince. Break the meat up with a spoon and keep stirring until the meat is evenly browned.Add the onion and cook for a couple of minutes until soft before adding the garlic and chilli.
Stir through for another minute or two then add the tomatoes and tomato puree. Bring to a simmer then reduce the heat and allow to gently cook for 15 minutes. Season with salt and pepper to taste then finish with chopped coriander and a squeeze of lime juice.
Meanwhile, cook your Original Cornish Hot Dogs either by shallow frying or steaming/ poaching them.
To shallow fry, bring your pan up to heat with a little olive oil, place the sausages in and keep turning for 20-25 minutes. Alternatively you can steam or poach the sausages for around 25-30 minutes before frying them off in a little oil for a couple of minutes to add a little colour.
When cooked, slice each hot dog bun across the top, spoon in a little chilli sauce followed by a hot dog then more chilli. Top with a slice of cheese and quickly flash under the grill to melt.
