Ingredients
4-6 sausage , skins removed and cut into chunks
250g butternut squash , peeled and cut into small cubes
1⁄2 onion , chopped
1 clove of garlic, finely sliced
a small handful parsley , chopped
200g linguine or other pasta of your choice, cooked
Method
Fry the onion, garlic, butternut squash and sausage pieces together in a little oil for about 10 minutes or until cooked.
Toss through the linguine, making sure that all of the cooking juices are soaked up by the pasta.
Season with salt and pepper, and sprinkle with the chopped parsley to serve.
